Banana cinnamon donuts! These donuts were baked to celebrate the return of my oven door. The door fell apart and was gone for a week while it was fixed. For someone who uses their oven a lot this was a pain. I saw this recipe and wanted to make it. They’re really tasty, the texture is very normal bread like.
Here I’m having them for a treat served with a slice of fudge, strawberries, grapes and freshly whipped cream.

Chicken! This is simple. Chop up two chicken fillets toss them in ground almonds and some smoked paprika. I fried them and served them on a tasty salad. And yes my salad includes grapes and strawberries.

Pork chops with sauce. Sometimes I throw a dinner together and it turns out to be far nicer than it has any right to be. Tonight was one of those nights. My oven is broken, the door is falling off so I can’t use it. So I decided to fry some pork chops. While they were frying I got the idea for this sauce. 

1 chopped apple, small pieces.
1/2 chopped onion.
2 cloves garlic, chopped
Chopped mushrooms

After frying the pork chops add some butter to the pan. 
Fry the onions and garlic until golden.
Deglaze the pan with white wine.
Add the apple and then the mushrooms.
Add some rosemary.
Add some cream and some nutmeg, salt and pepper. 
Serve over the chops.
One to make again.

4 ice cubes
1 banana
2 slices fresh pineapple
1/2 ish cup of Coconut milk
1/2 tsp vanilla
3 drops vanilla liquid stevia if you have it
Almond milk and water to provide enough extra liquid to blend it

This could only be improved by adding rum. Where’s that bottle of Appleton?

Lemon almond cake. I found this recipe here and decided to give it a go.

The cake turned out ok but if I make it again I will double the ingredients as my cake tin is bigger. I used maple syrup. Also I should have folded in the flours. It still tastes ok though. 

For the topping I blended the blueberries with coconut cream and a touch of maple syrup and vanilla. I put it in the freezer while I ate dinner and when it came out it was sort of ice cream like and delicious. I put some toasted hazelnuts on top. Yum!

Smoothies! My Mum got me a Kenwood Smoothie 2Go machine a while back. It’s a great gadget for quick smoothies and I use it a lot. I’ve been playing around with recipes and here’s one I like.

1 tbsp coconut palm sugar or honey
1/2 tbsp raw cocoa powder 

Avocado and coconut milk also feature in my smoothies. When I perfect those I will note them here.

I left the curry spice out of mine. I used a sunflower and pumpkin seed mix I had and I used a cheap bag of Nuts Royal from Lidl. I used a variety of dried fruit, cranberry, cherry and raisin. I didn’t have enough almond butter so topped that up with hazelnut butter. I must find a cheaper source of nut butters. Or else I’ll have to get that food processor I dream about and make my own on the cheap. I used slightly more honey than the recipe as the comments said that more honey would make them hold together better, I also added chia seed meal to see if that helped bind it too. I’ve had trouble with paleo granola bars crumbling apart before. These don’t, they are wonderfully chewy and a bit crunchy. Really tasty actually.

I’m hoping they will taste nice with a cup of coffee tomorrow morning.
